German Style Sour Slaw

This versatile sweet & sour slaw is great as a condiment on a burger or as a side to a decadent grilled cheese sandwich or as part of a ploughman’s lunch.

 

Ingredients

1/2 cup DEVIL'S ORCHARD Sour Black Cherry vinegar

3 cups red cabbage, thinly sliced

1 red onion, small, thinly sliced

2 Tbsp sugar

1 tsp celery seed or caraway seed

kosher salt and freshly ground black pepper

1/4 cup extra-virgin olive oil

 

Method

1. Slice cabbage and onion by hand or use a mandoline, remove the cabbage heart first.

2. In a food storage container with a tight lid, combine cabbage, onion, salt, sugar, celery seed and vinegar. Secure lid and refrigerate for 2-3 hours giving the container a light shake every hour or so.

3. Remove from refrigerator and mix in olive oil.

4. Marinate in refrigerator for at least an hour.
